Chinese Shrimp in Hot Mustard Crostini Recipe
These Chinese hot mustard shrimp crostini are the perfect addition for your upcoming Super Bowl party appetizer selection. They are simple to make and have a unique spicy flavor that is sure to please your guests. The shrimp in this recipe can be purchased pre cooked if available, or you can simply cook them the night before and store them in the fridge before combing them with the other ingredients.

16 small to medium shrimp (you can use fresh, frozen or pre cooked if you wish)
1 1/2 tbsp Chinese hot mustard
1 tbsp mayonnaise (Hellmans works best in this recipe)
1/4 tsp salt
16 large crackers or slices of toasted baguette
fresh parsley

  1. If you are using pre cooked shrimp, make sure they are peeled and then skip to step #7.

  2. For fresh and frozen shrimp leave the shells on (this gives flavor and allows them not to be overcooked.) Bring a large pot of water to a boil and set a large bowl with ice and water (ice bath) next to the pot.

  3. Once the water boils, add the shrimp and let them cook for about 2 to 3 minutes, or until they just turn pink and float. The shrimp may take longer depending on if you are using fresh or frozen. Just make sure not to overcook them. You want to remove them as soon as they turn pink.

  4. Then immediately place them in the ice bath to stop the cooking process.

  5. Once they are cooked and cooled, drain them.

  6. Then peel and dry them thoroughly. Most medium to small shrimp do not need to be deveined, but if you see a particular large dark vein, then remove it at this time.

  7. In a large bowl, mix together the Chinese hot mustard, mayonnaise, and salt. Then carefully stir in the shrimp so the each piece is coated with the sauce. Place these shrimp in the refrigerator while preparing the parsley.

  8. Rinse the parsley and thoroughly dry. Then tear off 16 small sprigs.
  9. Right before serving, top each cracker or crostini with about 2 shrimp and place a sprig of fresh parsley on top.


TIP: To make this recipe quick and easy, purchase pre cooked shrimp that are already peeled. Then you can simply toss them with the sauce ingredients and place them on the crackers.
