Brownie & Chocolate PB Chip Brookies
The word “Brookies” was coined in the last few years, and it means brownies – the B, and cookies – the ookies. Generally brookies are brownies and some other bar cookie. Sometimes there is a layer of brownies topped with a layer of chocolate chip (or whatever) on top. As the years have gone by, bakers have gotten more inventive, and spooned the batters in clumps onto the baking sheet so that they aren’t layered, but just baked as clusters that stick together. While the original brookies were probably brownies and chocolate chip cookies, the flavors have changed over the years to include brownies and any other bar cookie that the baker happens to like. The following Brownie & Chocolate Peanut Butter Chip Brookies are a favorite. They are good on their own, sturdy enough to fill up a cookie jar, and perfect to cut into squares to top with ice cream and hot fudge. ””

Peanut Butter Chocolate Chip Layer:
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter, (no subs)
1 egg
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups quick cooking rolled oats
1/2 cup semi-sweet chocolate chips
3/4 cup peanut butter chips

Brownie Layer
4 cups Mom's Brownie Mix
3 eggs
1 teaspoon vanilla

  1. Preheat oven to 350°.
  2. Spray a jellyroll pan (approx 11" x 17") with non-stick spray or line with parchment.
  3. For the Peanut Butter Chocolate Chip Layer: Cream the sugars and butter until light; add the eggs and vanilla and mix well.
  4. Stir in the flour, baking powder, salt, and soda; mix well.
  5. Stir in the oats and the chocolate and peanut butter chips.
  6. ”” Place clumps of the dough on the baking sheet, pressing them down, and leaving room for the brownie batter.
  7. For the Brownie Layer: Mix the brownie mix, eggs, and vanilla until smooth.



  8. ””Spoon brownie mixture in between the cookie dough, spreading carefully to fill in the gaps.
  9. Bake about 25-30 minutes or until both the brownies and cookies are baked through.
  10. Let cool thoroughly before cutting into 48 squares.
